After a summer of excess, where work and partying offer a challenge for even the stamina-strong amongst us, winter is time for some much-needed Ibiza Therapy. The first Thursday of every month sees an exciting collaboration between great food, fantastic drinks and cutting-edge beats in the stylish Café Montesol.
Join Michelin-star chef Dave de Belder as he reinvents the menu each month, using the finest locally sourced produce to deliver a mouth-watering feast. After dinner, enjoy the talent of some of Ibiza’s resident DJs as the island settles into its winter groove. The concept is the brainchild of Ibiza Style’s Jürgen Bushe, after a summer of successful food and music based events, he decided that winter in Ibiza needed something different and so, Ibiza Therapy was born. The next session is on Thursday December 7 and we caught up with Jürgen for a quick chat on the thinking behind the monthly therapy sessions…
What is Ibiza Therapy?
It is a ‘come together’ for Ibiza winter residents, which takes place on the first Thursday of the month throughout the winter at Café Montesol. It promises fun, an unforgettable evening that will feature an exquisite dinner, prepared by famous Michelin star chef Dave de Belder and will finish with dancing to the music of an Ibiza resident DJ.
How did the connect with Café Montesol coma about and what makes it the ideal partner for the party?
When the marketing department of Montesol asked me for proposals on how we could collaborate, I quickly thought about holding a monthly event at this emblematic island spot. The Montesol is a historical, stylishly decorated establishment, located right in the heart of the island’s historic centre that has been a fundamental part of the social and cultural life of the island ever since the 1940’s.
You combined food and music perfectly during the summer on the Me Hotel rooftop, did that success inspire this winter concept?
Yes, it was among the reasons, although Ibiza Therapy is a completely different concept.
The chefs are all Michelin star quality but their identity is not revealed unless you attend, what’s the thinking behind that?
At ME Ibiza there was a different guest chef at every event cooking. At Montesol, all of the events will feature the same chef, Dave de Belder, backed by the kitchen and restaurant staff.
Ibiza has become a prominent destination for foodies in recent years, are these chefs the new island stars?
Since last summer it is quite en vogue on the island to bring guest chefs, mostly Michelin-starred ones, to special events. They are stars on the island for one day only. That’s why I preferred last summer that those who we invited cooked together with the staff of the ME Ibiza. So, the kitchen team could benefit from their skills and learned a lot. Generally, the level of the Ibiza gastronomy has reached a new, higher heights in the last two years. Now, during winter, I prefer to have more continuity in the cooking style of the guest chef. That’s why I decided to have the same chef, who i trust 100 percent, on board at Ibiza Therapy for all of the events.
What’s the best thing about Ibiza in the winter?
It is the calm after the hectic summer, the agreeable climate and the light. But, above all, a chance for the island residents, who have worked hard every day during the summer, to be more relaxed and have time to meet, to talk and have fun together.
When is the next event and what can we look forward to?
The next event is on Thursday, December 7. It is our third culinary and social Ibiza Therapy event at the emblematic Café Montesol this winter. So, when you join us for dinner therapy, the Night Nurse Sister will welcome you with a homeopathic mix of Ibizan herbs and guide you to your therapy space. Here, the head therapist personally looks after your every need, alongside his well-informed team. The therapy is derived from local products and flavors of the island, from the natural, organic ingredients that the land and sea seasonally bless us with. He conjures up a sensational menu at Michelin-star level. The dishes are accompanied by the excellent wines from the Bodega Alta Pavina of the Ortega brothers in Ribera del Duero. Your therapy is completed with a cream from Cafés Ibiza and a Mari Mayans Frigola Magic Cube.

January 4, February 1, March 1, April 5 and, from May onwards, we will continue, possibly on the rooftop of Montesol.
